Just outside the Czech city of Brno, known for its motor racing circuit, there are rolling fields and orchards dotted with hamlets and canals.

Pulling up to the white stone frontage of an old mill in the village of Velké Němčice, you might think we were about to enter some artisanal throwback to a hand-crafted past. But a quick look around inside tells another story.
